Zingy Tasty Mala/Sichuan inspired Noodles

 This is the perfect little pick-me-up lunch that I could basically eat every day. 

Serves 2.

Ingredients:

Sauce:

1/2 cup chicken or vegetable stock (the richer the better, but bullion will do in a pinch)

1 tbsp soy sauce

3 tbsp Sichuan chili oil (preferably homemade)

a pinch of toasted, ground sichuan peppercorns (optional)

2 tsp sesame paste/tahini

1 tsp sugar

1/2 tsp dark Chinese vinegar*

2 tbsp sesame seeds

1 green onion, thinly sliced

2 garlic cloves, minced

a pinch salt

a pinch MSG (optional)


200g noodles (ramen, soba, even spaghetti)

2 eggs, poached or fried

1 bunch fresh spinach

roasted crushed peanuts to garnish (optional)


Method:

Mix together all the sauce ingredients. You can reserve some of the green onion and sesame seeds to garnish if you like. 

Bring a medium pot of water to a boil and boil the noodles until cooked to your liking. In the last 30 seconds of cooking, also blanch the spinach in the same pot. Then drain the noodles and spinach together and quickly divide. 

While the noodles are boiling, poach or fry your eggs.*

Divide the sauce between the two bowls and top with an egg each. Garnish with peanuts, scallions, sesame seeds, and a little extra chili oil. Mix and devour!

*Notes:

If you don't have dark Chinese vinegar balsamic vinegar is the best substitute. 

I poach my eggs in a ramekin in the microwave. I crack an egg into a ramekin, cover it with water, and then microwave for about 50 seconds. I then drain it on a slotted spoon and put it right on top of the noodles. Easy and healthy!
