Ratatouille Chez Nous

1 Large Aubergine
2-3 Courgettes
2 Bell Peppers (Red, yellow, or orange, but not green)
1 Red Onion
1 Garlic Bulb
1 Large Can Plum Tomatoes
Balsamic Vinegar or Red Wine
2-3 Bay Leaves
Basil
Oregano
Olive Oil
Salt and pepper to taste

Finely dice the onion and garlic and fry them in a large pot. Chop the aubergine, courgettes, peppers and add them to the pot. Once they're warmed over, slice up the plum tomatoes and add the can. Top up with water if needed. Add the bay leaves, oregano and basil and let the stew simmer for 30 minutes. At the end add some salt and pepper and a touch of balsamic vinegar.
