Ginger Bug

1-2 fresh ginger roots
1/2 cup white sugar
4 cups of water
1/2 gallon jug with a bung
1 Tsp Wine Yeast

Whisk up the ginger in a food processor than boil it up in a pot with the water and sugar.
Pour this mixture into the juy, when for it to cool down to around room temperature and then add the yeast. Shake this up well, top it with the bung and the mixture should start breathing. If need be add some yeast nutrient, but that shouldn't be necessary. A tablespoon of sugar a day is required to keep the bug living, and a good shake is useful too. Keep this in a warm place and you can use it to make carbonated ginger at any time.
