2 cups dry Red Lentils
8 cups Broth (Chicken, vegetable, whatever takes your fancy)
1 can Tomatoes
2 medium Onions
2 Bay Leaves
1 Tbsp Paprika
1 Tbsp Italian Seasoning or 1/2 Tbsp Oregano 1/2 Tbsp Basil
1/4 Tsp Cayenne Pepper
Salt and pepper to taste
1 Tbsp Butter or Oil to fry the onions
Dice the onions and fry them in the oil until softened up and translucent.
Add in the lentils and fry them up with the onion for about two minutes to get them covered in the oil and flavours.
Add the rest of the ingredients and simmer for twenty minutes.
Add salt and pepper to taste.
Serve hot and melt some cheese on top with some fresh crusty bread!
