1 Can Whole Peeled Tomatoes
1 Small White Onion

Apple Cider Vinegar
Olive Oil

Pour a good glug of good quality olive oil into a pan, heat and add the thinly sliced onion, until softened and slightly browned. Cut the sundried tomatoes into pieces - you still want their texture and bite - and add them to the onions with the can of tomatoes. Let that simmer, and add a good tablespoon of sugar and about 2 tablespoons of honey. If it's looking a little dry top up with some apple cider vinegar and maybe some water if you're worried about the vinegar being overpowering. A big pinch of salt should help balance the sweetness. After a hard boil, let the jam simmer on a lower heat for about an hour. Let this cool, check the flavour, and can as needed.
