Remembering Rice Pudding

1/3 cup Short-grain Rice
2 1/2 cups Whole Milk
1/4 tsp salt
1/3 cup Granulated Sugar
1/4 tsp Cinnamon
1 tsp Vanilla extract
1 Tbsp Butter

Add the salt, rice and milk to a saucepan stir together and heat on high until boiling. Then bring to a low simmer and continue stirring to prevent sticking. Let simmer on medium for 20-25 minutes or until the rice is cooked then add the sugar and cinnamon. Cook until desired consistency is achieved. Before serving stir in the butter and vanilla.

Serve in small bowls with a sprinkling of cinnamon on top.
