Take Care Vegetarian Kare Kare

1 Tbsp Annatto Powder
1 Medium Onion
Half Garlic Bulb
1-2 Eggplants
2 Cups Okra
1 Cup Green Beans
2 Tbsp Soy Sauce
1/2 Cups Peanut Butter
1 Stock Cube
1 Cup Water
1 Lime or 2-3 Kalamansi
Cooking Oil

Mix the Annato Powder with 3 Tbsp of warm water. Allow to sit while you prepare the rest of the ingredients.
Roughly chop the onion and press the garlic and fry in a pot with some oil. Roughly chop the eggplant and add to the pot to soften. Cut the okra into cm thick circles and cut the green beans to about an inch long. Add these to the mixture and soften. If there's too many veggies going, add some water, then add the soy sauce. Once these veggies seem nicely cooked, about 10 minutes, add the annatto powder solution, the stock cube, peanut butter, and the water. Stir and then let stew for at least 30 minutes.

Serve with rice and some lime/kalamansi to squeeze over.

Any veggies are good to add to the sauce really. Zucchini, bok choy, spinach are all good and healthy options to add.
Annatto powder can be found in Asian grocery stores.
