1lb Pork loin
2-3 Carrots
1 Nub Ginger
1 Large Onion
1 Garlic Bulb
3 Bell Peppers
1 Can Pineapple Rings
1/2 White Vinegar
3 Tbsp Soy Sauce
1/4 Cup Honey
1/4 Cup Cornflour
1/4 Cup Ketchup
Cooking Oil
Bay Leaf
Black Pepper
Cut the pork loin into generous chunks, roll in corn flour, and fry until golden crisp in oil in a skillet. Set aside. In a large pot fry up the chopped onion, carrots and garlic with the bay leaf. Once softened, add the pork, and thinly sliced and peeled ginger. Chop up the peppers and saute these lightly for about 5 minutes. add the vinegar, soy sauce, honey, and ketchup. Try to balance flavours and add more of one or the other to taste. Simmer for 15 minutes, or until all of the vegetables are cooked. It's nice if the carrots still have a little bite, but for the bell peppers to not be too soft. Finish up with some ground black pepper or even some dried chili flakes.
Serve with fluffy white rice!
Note: If you want a thicker sauce, make a slurry with some of the cooked sauce with any leftover corn flour.
