150ml hot black tea
175g malt extract, plus extra for glazing
85g brown sugar
300g mixed dried fruit and mixed peel
2 large eggs, beaten
250g plain flour
1 tsp baking powder
½ tsp baking soda
Turn oven on to 300 F. Grease a loaf tin with butter.
Pour the hot tea into a mixing bowl with the malt, sugar, dried fruit and peel. Stir until the sugar dissolves and then mix in the eggs.
Sift the baking powder, baking soda and flour into the mix and stir together.
Throw into the oven and bake for 50 mins until firm and risen. Pull out and glaze with some extra malt extract while still warm.
Serve with tea and butter!
