Tamarind Mango Chutney

1/4 cup Tamarind Concentrate
6Tbsp brown sugar
1/2tsp kosher salt
1 medium red onion
1/2 tsp chopped chile or chile flakes
2 tsp finely diced ginger
2medium mangos diced
2tsp chopped mint
2Tbsp chopped cilantro

Mix everything together in a jar, store in the fridge. Before serving ad the mint and cilantro.
