Fish Pie

 1 1/2 lbs Cod

1 Mackerel filet

3 Leeks

1 Carrot

1 Onion

2 Celery sticks

2 Handfuls of spinach

5 Large Potatoes

1/2 Pint Fish stock

Olive oil and butter

2 Heaping Tbsp Flour

Single/double/whipping cream


Preheat the oven to 425F

Start the potatoes to boil - these will be mashed when done.

Finely dice or process the carrots, onion, and celery and fry as a mirepoix until done. Add a little more butter or oil and fry up the leeks, cut into chunky sets. Add the flour and cook for 30 seconds to start a roux. Add the stock bit by bit until fully mixed and the stock begins to thicken and finish off with some cream. Add in the spinach.

Turn the boiled potatoes into mash, using butter, milk, and an egg yolk if you wish.

Arrange the fish in an oven dish, cover with your sauce, and then cover this with your mashed potatoes.

Put this in the oven for about 25 minutes. Take out and enjoy!
