Crimbo Mulled Wine

Ingredients:

200 g sugar

2 clementines

1 lemon

1 lime

1 cinnamon stick

6 cloves

2 star anise

3 bay leaves

1 tsp vanilla

1/2 tsp nutmeg

1.5 litres of red wine


In a large heavy- bottomed pot, put in the sugar, the zest and juice of the citrus fruits, and the spices. Cover the sugar with some red wine. Bring to a rolling boil and bubble away for 5 minutes, until the sugar is dissolved and the spices smell heavenly. Add the rest of the wine, and heat through gently, so as not to burn off the alcohol. Add the vanilla.
