Preheat oven to 140C (285F)
125g softened butter 75g sugar 1 generous tablespoon golden syrup 125g wholewheat flour 200g chopped oats A good pinch of salt 1 level tsp baking soda Around 2 tablespoons of water
Cream the sugar and butter together. Mix the rest of the ingredients together. The water is there to make sure the ingredients come together without cracking.
Roll out the dough to under around a quarter inch. Punch out the hobnobs with a cookie cutter and bake in the oven for 23-25 minutes until golden brown, with a crispy bottom. You can leave them in the oven for another 10 minutes with the oven turned off, and then take them out to let them rest for another 10 minutes on a cooling rack. They should be a deep golden brown.
Enjoy with some tea!
