Barbecue Baked Beans

 

  • 1 pound navy beans

  • water

  • 1 bay leaf

  • 1 onion

  • 1 cup barbecue sauce

  • ½ cup ketchup

  •  cup apple cider vinegar

  • ¼ cup packed light brown sugar

  • 3 tablespoons molasses

  • 2 tablespoons yellow mustard

  • 1 teaspoon Worcestershire sauce

  • 1 tablespoon smoked paprika

  •  teaspoon cayenne pepper

  • 1 teaspoon freshly ground black pepper

  • 1 tablespoon kosher salt

  • 1 teaspoon garlic powder

  • 2 ½ cups reserved bean cooking liquid

Soak the beans overnight, cook until soft. Drain any remaining liquid and re-add about 2 1/2 cups of that same liquid. Add the rest of the ingredients and get simmering for about 10 minutes. Bake in an oven preheated to 350C for 2-3 hrs.

Serve with meats and coleslaw!
