Ingredients:
2 large eggs, beaten
3-4 mashed bananas
½ cup vegetable oil
⅓ cup buttermilk
1 ¾ cups all-purpose flour
1 ½ cups white sugar
1 teaspoon baking soda
½ teaspoon salt
1 tsp vanilla
1 1/2 tsp cinnamon
1/2 cup raisins (optional)
1/2 cup chocolate chips (optional)
zest of one orange (optional)
Topping:
1 tbsp apricot jam
1/2 cup toasted slivered almonds
powdered sugar for dusting
Directions
Preheat the oven to 350 degrees F. Grease a 9x5-inch loaf pan.
Mix eggs, bananas, oil, buttermilk, and vanilla together in a large bowl until well combined. Sift flour, sugar, baking soda, salt, and cinnamon into a separate large bowl. Stir flour mixture into the banana mixture until just combined. Gently fold in raisins, chocolate, and orange zest- do not overmix! Pour batter into the prepared loaf pan.
Preheat the oven to 350 degrees F. Grease a 9x5-inch loaf pan.

When the banana bread is out of the oven, brush the top with the apricot jam and sprinkled the toasted almonds over. Before serving, dust with powdered sugar.
