2/3 cup oil - fat of your choice
2 celery stalks - diced
1 onion - diced
1 pepper - diced
2 peppers - chopped
garlic - diced
chicken - chopped
sausage (Andouille is ideal, but any smoked sausage is fine)
shrimp/prawns
chicken broth
okra - chopped
paprika, gumbo file, cayenne pepper
In an enameled pot carefully make a dark, chocolate, nutty roux with the oil and flour. Stir consistently and once it gets to the optimal darkness add the diced aromatics and maybe some water/broth to stop the roux from getting any darker or burning.
Cook the aromatics down then add the chicken til near cooked. Add the sausage, okra, and peppers as needed. Add your spices.
Prep some rice!
Add the broth and get everything mixed and cooked. And the shrimp/prawns at the end so they don't over cook.
Serve with rice!
